Strawberry Delight Cake

Strawberry Delight Cake
This cake is nothing more than a 1-2-3-4 cake recipe with a custard sauce as a filling, topped with sweetened strawberries and then topped with sweetened whipped cream. This is a gorgeous cake when decorated with strawberries.
You can tell I love custard.

  • 1 cup butter, softened
  • 2 cups granulated sugar
  • 4 eggs, separated
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 teaspoon almond flavoring
  • 2 quarts strawberries-sliced in halves and sweetened to taste with
  • 1 cup powdered sugar

Note: Some folks like to use granulated sugar to sweeten strawberries. Granulated sugar does not dissolve as well. Keep the strawberries in the refrigerator until ready to use. (Save out some of the prettiest whole strawberries to garnish with.)

  • 2 half-pints heavy cream whipped until stiff peaks and sweetened to taste with ½ cup powdered sugar

Cake Batter:
Cream butter; gradually add sugar, beating until fluffy. Add egg yolks, beating
well after each addition. Combine flour with baking powder and salt. Add to
creamed mixture alternately with milk—beginning and ending with flour. Beat
egg whites until stiff, but not dry. Fold into batter. Pour batter into prepared
pans-3 (8-inch) greased, floured and wax paper lined pans. Bake at 350-
degrees about 25 minutes. Do the toothpick test. When done, you must cool
the cake layers completely before adding custard filling.

Custard Filling:
½ cup sugar
3 tablespoons cornstarch
¼ teaspoon salt
3 egg yolks, slightly beaten
2 cups milk
1 teaspoon vanilla extract
1 tablespoon butter
Mix together sugar, cornstarch, and salt in a saucepan. Gradually, add the egg
yolks and milk, to the sugar, cornstarch and salt mixture. Cook over medium
heat until it thickens and boils for one minute. Then remove from heat and
add the butter and vanilla extract. Cool completely.
To assemble the cake:
Spread custard filling between each cake layer. Top the custard with layer of
sweetened strawberries, then top the strawberries with the whipping cream.(In
sequence-custard, strawberries, and whipping cream) When you reach the very
top layer of the cake, frost the top layer and sides with whipping cream and
garnish the top with the whole strawberries. This cake will make the Grand
Finale for a Dinner Party!
