Quick Supper of Oven Fried Chicken with Dressing

1 (3-4 pound)chicken, cut-up
1 cup all-purpose flour
1 teaspoon salt or seasoning salt
1/4 teaspoon pepper
Cooking oil

Dressing

1/2 cup butter
3/4 cup celery, diced
3/4 cup onions, diced
1 (14-ounce) can chicken broth
1/3 cup milk
1 (10.5-ounce) can cream of chicken or cream of mushroom soup
1 (14-ounce) bag herb seasoned stuffing
Black pepper to taste
Paprika

Preheat oven to 350-degrees. Grease a 13 x 9 x 2-inch baking dish. Mix the flour with salt and pepper in a large zip-top bag.
Coat the chicken with the seasoned flour mixture by placing the chicken in the bag and shaking.

In a heavy skillet, pour 1/4-inch cooking oil and heat until sizzling hot. You will need to just brown the chicken in the hot grease, do not completely cook it.
Set aside. In a separate skillet, sauté’ onions and celery with butter until transparent, stir in the broth, and heat until it boils. Cut the heat down and add the milk
and soup, stirring until smooth. Add the stuffing mix and mix well with the ingredients.

Place the stuffing or dressing mix in the center if the baking dish and arrange the chicken pieces around the dressing. Sprinkle chicken and dressing with black pepper
and paprika. Bake for 50 to 60 minutes until chicken is completely done.

Broccoli and Cauliflower Casserole

1 (10-ounce) package of frozen broccoli, chopped
1 (10-ounce )package of frozen cauliflower, chopped
1 can of cream of mushroom soup
1 can Cheddar cheese soup
1/2 cup evaporated milk
1 tablespoon Worcestershire sauce
1 can French Fried onion rings OR you may purchase the bag of onion rings found in the potato chip aisle. These are better.

Mix 1 cup of water with the broccoli and cauliflower and cook about 10 minutes. Remove from the heat and drain well. Mix the soups, milk, and
Worcestershire sauce. Pour over the broccoli and cauliflower and mix thoroughly. Pour into a casserole dish and bake for 20-25 minutes at 400 degrees.
NOTE: The last 5 minutes, top the casserole dish with the onion rings.

Yield: 6-8 servings

Dessert for MOM
A quick but elegant dessert. This dessert take only 15 minutes to prepare and 30 minutes in the fridge.. This is perfect for unexpected company.
1 envelope unflavored gelatin
2 tablespoons cold water
3/4 cup granulated sugar
2/3 cup dry cocoa
1 1/2 cups heavy whipping cream
1 tablespoon vanilla extract
Hershey bar or Andre mints for

Sprinkle the gelatin over the cold water in a very small bowl. Stir. Let stand for 1 minute just until its softens the gelatin. Add the boiling water to the gelatin, stirring
until the gelatin is completely dissolved. The mixture will be clear. Set aside.

Using a cold medium-size bowl, stir together the sugar and cocoa. Add the heavy whipping cream and vanilla extract, beating until stiff peaks. Now pour
in the dissolved gelatin and beat until well blended.

Spoon this delicious delicacy into fancy serving dishes. Garnish with chocolate shavings or I simply break a Hershey’s bar along the little square and put a
square of Hershey’s chocolate in the mousse.

Yields: 4-servings
